is there a way to shorten HFS3 cables?

Yes, two ways:
1. Roll it up into a bundle.
2. Cut and re-crimp.

So they are just RJ45 plug... are the stock one reusable, so re-open and re-crimp?

Other than the brown wire, they are all stright forward. It is a standard RJ45 plug. Stock one is not reusable, once crimped.
The OD of the brown wire is too large to go into the plug cavity. You need to strip, twist and solder tinned before crimping.
Seriously, rolling it into a bundle is just as effective unless reducing weight is very important in your application.
